Provided is a method for easily and accurately detecting or predicting cracking occurrence when roasting coffee beans. A coffee bean cracking detection method according to the present invention comprises: an average value calculation step for calculating an average value of sound pressure during a cracking non-occurrence period, when temporally measuring sound having a frequency in a range included within the range of 5-80 kHz generated from coffee beans that are being roasted and a roasting device; and a cracking detection step for, by using the average value of sound pressure as a threshold, determining that cracking of the coffee beans has been detected if the measured sound pressure exceeds the threshold value and, within a time interval of 0.1-99 milliseconds selected from a time period between the time point of exceeding the threshold value and 0.1-100 milliseconds prior to said time point, if a sound pressure of n-fold (n is more than 1/6 but less than 1/3) of the threshold value has not been detected.
