The present invention relates to a method for producing Orostachys vinegar, which is used to produce Orostachys vinegar prepared by using Orostachys and is capable of increasing active ingredients of Orostachys, and to Orostachys vinegar produced by the same. More specifically, the method for producing Orostachys vinegar comprises: (a) a step of preparing fresh Orostachys; (b) a step of drying the fresh Orostachys prepared in the step (a) to prepare dried Orostachys; (c) an Orostachys powder preparing step of preparing Orostachys powder through the dried Orostachys obtained in the step (b); (d) a step of preparing Orostachys marmalade with the fresh Orostachys prepared in the step (a); (e) a step of mixing the dried Orostachys in the step (b), the Orostachys powder in the step (c), and the Orostachys marmalade in the step (d) to produce an Orostachys mixture; (f) a step of obtaining a first fermented broth by inoculating the Orostachys obtained through the step (e) with yeast and then performing first fermentation; (g) a step of obtaining a second fermented broth by inoculating the first fermented broth obtained through the step (f) with yeast and then performing second fermentation, and filtering the second fermented broth with a filter paper to obtain Orostachys vinegar; and (h) a step of aging the Orostachys vinegar obtained through the step (g).
