The present invention relates to a method for producing spirits using a flower stalk of Nypa fruticans, and to the spirits, and more specifically, the method for producing spirits using the flower stalk of Nypa fruticans comprises the following steps: producing diluted alcohol having the alcohol concentration of 40 to 50 vol% by adding brewing water to alcohol having the alcohol concentration of 90 to 97 vol%; deodorizing produced diluted alcohol; mixing the deodorized diluted liquor with an extract of the Nypa fruticans and filtering the mixture; and finally diluting the filtered diluted alcohol by adding the brewing water to the diluted alcohol. According to the present invention, it is possible to provide the spirits excellent in functional properties, and capable of relieving hangover after drinking, and the functionality unique to the Nypa fruticans is imparted to satisfy the preference of consumers.
