The present invention relates to a method for producing a red pepper paste, comprising the following steps: (1) washing glutinous rice, soaking the same in a first mixed water composed of 80% of alkaline water and 20% of a Vaccinium oldhamii Miq extract at an even ratio for 10-14 hours, and grinding the same so as to obtain glutinous rice powder; (2) steaming the glutinous rice powder at 110-130C for 40 minutes to 1 hour; (3) adding malt to a second mixed water composed of 20% of the extract and 80% of distilled water and then filtering the same for at least three times, to obtain ma (4) mixing the malt and the glutinous rice powder obtained in steps (2) and (3), and saccharifying the mixture at 23-27C for 3-5 hours so as to obtain a grain syrup; (5) mixing the grain syrup with red pepper powder, salt, soy sauce, and fermented soybean lump powder; and (6) fermenting and aging the grain syrup mixture acquired in the step (5) at 23-27C for 5-7 months.;COPYRIGHT KIPO 2018
