The invention relates to a dispersion of drops (12) of a first phase in a second phase substantially immiscible with the first phase, the solubility of the first phase in the second phase being less than 5% by mass. Each drop (12) comprising a core formed from the first phase and a shell formed from a layer of coacervate interposed between the first phase and the second phase.The layer of coacervate comprises a first polymer precursor of the coacervate and a second polymer precursor of the coacervate , one of the first phase and of the second phase being aqueous, and the other of the first phase and of the second phase being oily.
