PROBLEM TO BE SOLVED: To provide an ume alcoholic beverage, an ume alcoholic beverage base, a method for producing an ume alcoholic beverage, a method for producing an ume alcoholic beverage base, and a method for improving the flavor of an ume alcoholic beverage, where, nut skin-like astringency that is felt when put in a mouth and live tree-like bitterness that remains the mouth are suppressed.;SOLUTION: An ume alcoholic beverage according to the present invention has a content of ethyl isobutyrate of 0.020-0.300 mg/L and a content of α-ionone of 0.020-0.300 mg/L and contains polyphenol.
