PROBLEM TO BE SOLVED: To provide a rapidly-soluble thickner or the like capable of showing a viscosity comparatively early, while showing hardness in a comparatively high degree, even when being blended into food containing comparatively much ion.SOLUTION: There is provided a rapidly-soluble thickner containing a xanthan gum deacetylated so that the acetyl group content becomes 2% or less, which is a xanthan gum derived from fermentation of Asia-Xanthomonas-Campestris, in which, when being added into 1.0 wt% salt water so as to obtain a concentration of 1.0 wt%, the viscosity reaches 90% or higher of the maximum viscosity within 3.0 minutes.SELECTED DRAWING: None
