The invention provides a cutterhead temperature detecting device and a shield tunneling machine. The cutterhead temperature detecting device comprises a temperature acquisition module (1), a control module (2), a sending module (3), a receiving module (4) and a display module (5) which are sequentially connected, and the temperature acquisition module (1) is used for acquiring real-time temperature values of the cutting end surface of a cutterhead and sending the real-time temperature values to the control module (2). The control module (2) is used for obtaining mud cake forming states according to the real-time temperature values and sending the mud cake forming states to the receiving module (4) through the sending module (3). The receiving module (4) is used for sending the received the mud cake forming states to the display module (5). The shield tunneling machine comprises the cutterhead (6) and the cutterhead temperature detecting device.
