The present invention provides a supercooling low temperature pretreatment method for improving a survival rate and storage stability of Leuconostoc mesenteroides WiKim32. The supercooling low temperature pretreatment method according to the present invention shows an excellent effect in improving the survival rate of lactic acid bacteria after freezing or lyophilization of Leuconostoc mesenteroides WiKim32 as compared with the conventional 10°C low temperature pretreatment method, and storage stability according to the storage time is also excellent. Therefore, by the method of improving the survival rate and storage stability of Leuconostoc mesenteroides WiKim32 according to the present invention, it is possible to ultimately improve the quality of lactic acid bacteria-containing products, improve the storage stability, and significantly reduce the distribution cost of lactic acid bacteria-containing products.
