The present invention relates to a simple rice noodle using Vietnamese rice and a method for producing the same, comprising: (A) crushing after immersing Vietnamese brown rice in water; (B) naturally fermenting the crushed brown rice powder immersed in water; (C) dehydrating the fermented brown rice powder to make into a sludge state; (D) mixing the brown rice powder sludge with the gelatinized white rice to prepare dough; (E) extruding the dough in the form of rice noodles for primary gelatinization, and then soaking in hot water for second gelatinization; and (F) cooling and drying the gelatinized rice noodles. Therefore, the present invention can significantly increase the content of GABA and improve the functionality and recovery rate.
