The present invention relates to a producing method of phyllostachys nigra munro noodles using phyllostachys nigra munro leaves and the phyllostachys nigra munro noodles produced by the method and, more specifically, to a producing method of phyllostachys nigra munro noodles using phyllostachys nigra munro leaves, which comprises: a step 1) of producing powder or extract by drying and crushing phyllostachys nigra munro leaves, a step 2) of mixing the phyllostachys nigra munro powder or extract with flour and mixing and kneading water, salt, and gastrodia elata blume, and a step 3) of extracting noodles after aging the dough in a bamboo container, and the phyllostachys nigra munro noodles produced by the method. The phyllostachys nigra munro noodles using phyllostachys nigra munro leaves: have excellent functionality by giving characteristics of phyllostachys nigra munro leaves to the taste, flavor, and color of normal noodles having no characteristics; and enable users to easily take advantages of phyllostachys nigra munro leaves beneficial to the health of modern people by enhancing antioxidant, antiviral activity, anti-inflammatory activity, and anti-cancer activity.
