The present invention relates to sugar-free fermented liquor using a cactus and a distilled liquor manufacturing method using the fermented liquor capable of being fermented by using a cactus as main raw material without adding any sweet component, and distilling the fermented product to provide unique sensuality and flavor of the cactus. The distilled liquor manufacturing method using the fermented liquor comprises: a step a) of preprocessing the cactus and freezing/drying the same for removing moisture of viscous polysaccharide of the cactus; a step b) of crushing the frozen and dried cactus of the a) step, and heating the crushed cactus powder at a room temperature without generation of frost; a step c) of immersing processed malt and yeast in water, putting the cactus powder of the b) step in an immersed malt mixture, and stirring the same for at least one hour; a step d) of manufacturing an aerobic fermented liquid through aerobic fermentation by adding water in a manufactured product of the c) step without adding sweet component; a step e) of manufacturing an anaerobic fermented liquid through anaerobic fermentation by using the aerobic fermented liquid of the d) step; and a step f) of obtaining filtrate from which a residue is removed by filtering the anaerobic fermented liquid of the e) step.;COPYRIGHT KIPO 2019
