To provide a lean meat quality preserving agent that is excellent in quality preservation effect such as being able to suppress discoloration and/or color-change of lean meat; a method for preserving the quality of lean meat; and use of nigerooligosaccharide for the production of a quality preserving agent for lean meat.SOLUTION: By using nigerooligosaccharide in lean meat, excellent quality preservation effect such as suppression of discoloration and/or color-change of lean meat, suppression of dripping, suppression of fishy smell and/or unpleasant taste, and the like is achieved. Therefore, by this, a lean meat quality preserving agent and a method for preserving quality of lean meat, and use of nigerooligosaccharide for the production of lean meat quality preserving agent, that are excellent in lean meat quality preservation effect can be provided.SELECTED DRAWING: None
