PROBLEM TO BE SOLVED: To provide a casein enzymolysis product with high umami and little bitterness.SOLUTION: The method for producing a casein enzymolysis product having a free glutamic acid content of 3800 mg/100 g or more is provided that uses a proteolytic enzyme derived from a microorganism belonging to the genus Aspergillus, a proteolytic enzyme derived from lactic acid bacteria, and an enzyme having glutaminase activity against the casein. Also provided is the casein enzymolysis product having a free glutamic acid content of 3800 mg/100 g or more.SELECTED DRAWING: None
