To provide powdered miso with improved hygroscopicity, a manufacturing method of powdered miso, and a hygroscopicity improvement method of the powdered miso.SOLUTION: There is provided powdered miso which has improved hygroscopicity, and content of nucleic acid of 500 to 10000 mg/100 g, and of which an XRD peak intensity ratio at each diffraction angle satisfies a prescribed condition when a diffraction peak intensity at diffraction angle of 2θ=31.7°±0.5° is 100. The powdered miso is preferably a freeze dry powder. There is provided a manufacturing method of powdered miso including an addition process for adding nucleic acid to miso so that content of the nucleic acid is 500 to 10000 mg/100 g, and a drying process for conducting a drying treatment on a raw material after the addition process. There is provided a hygroscopicity improvement method of the powdered miso including conducting the drying treatment after adding the nucleic acid to miso so that content of the nucleic acid is 500 to 10000 mg/100 g.SELECTED DRAWING: Figure 3C
