the development of new food products presents itself as a commercial need, in view of the consumer demand with regard to differentiated foods, which present health benefits, excellence in sensory quality, are practical and readily available. allied to this, the use of residues from fruit processing industries can be of extreme industrial importance, considering that these products may have high levels of bioactive compounds, related to health benefits and that can act as natural preservatives in foods. in this context, this work had as objectives: to develop structured fruits from tropical fruit pulp and gellan gum and / or another polysaccharide added with bioactive extract of agro-industrial by-products of tropical fruits. the optimization of the extraction process of bioactive compounds present in agro-industrial by-products of tropical fruits was carried out using an assisted ultrasound technique, using a response surface design. the increase in the power used resulted in greater extraction of bioactive compounds, resulting in greater bioaccessibility of phenolic compounds and antimicrobial activity on gram-positive and gram-negative bacteria. the extract with the highest bioactive content, according to the extraction optimization, was added to the structured tropical fruit, resulting in product enrichment with respect to total phenolic compounds, total antioxidant activity and ascorbic acid content. the inclusion of extract of by-products of tropical fruits in structured tropical fruits results in a product with a high content of bioactive compounds, anti-inflammatory activity and reverse effect to pain.
