The present invention relates to a method of assessing the nutritional status of cultivated vegetables, in which the method comprises the steps of: cultivating at least one population sample of a vegetable, in which the population sample consists of representative samples and unknown samples , determine a set of representative samples from the population sample, calibrate at least one statistical model in the near infrared from the set of representative samples and evaluate a property of interest to the unknown sample. A method of extraction and separation of cultivated vegetables is also proposed.
