This technology relates to a vegetable spread product made from ricotta cheese, sweet potato, and carrot and to the process of making the same, comprising of the following steps: 1) preparation of the liquid cheese through the following steps: a) melting the butter in a saucepan; b) combining milk, flour, and sa c) boiling the mixture over medium heat and then reducing heat to low and simmer for 2 minutes or until it melts or until slightly thickened; d) removing the mixture from heat; e) putting cheese and stirring it until it melts; 2) refrigerating the ricotta cheese for one week or longer; 3) peeling the sweet potatoes and carrot; 4) boiling the sweet potato and carrot for 10 to 15 minutes at 100 øC; 5) grating and mashing the boiled sweet potato and carrot; 6) blending of grated and mashed sweet potatoes and carrots, including the cheese, olive oil, and sugar in a food processor; 7) packing the mixture; and 8) blanching for 20 minutes, cooling, and then storing.
