The present invention relates to soft-shelled turtle oil and a production method of soft-shelled turtle powder and, more specifically, to soft-shelled turtle oil which minimizes component destruction during a producing process and requires low process cost, and to a production method of soft-shelled turtle powder. A production method of a soft-shelled turtle extract comprises the steps of: primarily freeze-frying soft-shelled turtles; forming a crushed soft-shelled turtle product; secondarily freeze-drying the crushed soft-shelled turtle product; and extracting a first supercritical extract and a second supercritical extract.
