The present invention relates to a composting method for organic waste and a composting device for organic waste. The method is characterized by including: a mixing step for composting organic waste introduced from the outside using a complex mixer which has a stirring function and a water content adjustment function and adjusting water content to a predetermined value; a fermentation step for continuously supplying or maintaining aerobic microorganisms to ferment the compost in which water content has been adjusted in the complex mixer; an aging step for storing the compost fully matured through the fermentation step and aging the compost; and a packaging step for packaging the compost which have finished aging, as a finished product. Odors generated in the mixing step, the fermentation step, and the aging step are deodorized by a complex deodorization facility. Unlike the prior art, the present invention can remarkably improve composting treatment efficiency by adding sawdust to organic waste such as livestock manure having high water content, and fermenting the organic waste after crushing the same, and the present invention also can minimize air pollution around the workplace by carrying out all processes in a building, and maintaining the inside of the fermentation tank at a negative pressure, so as to block the discharge of odors.
