From the basis of a little known description of a court festival at the beginning of the seventeenth century, we have been led to investigate the composition and instructions for making jams and what was meant by the word jam at the time. We also wanted to illustrate the role these sweet courses played in banquets, compared to what they represent to what they represent to us today.
