摘要

This report describes the results of the second phase of a study carried out in spring-summer 2005 on the eating habits of the population of Ferrara. The results of the survey conducted in autumn-winter 2004 were published in a previous report (Rapporti ISTISAN 07/3). Information is provided on the type, quantity and frequency of consumption by age and gender in a representative sample of the population. The results are also compared with those obtained in the previous phase. The data collected by the two surveys allowed a stochastic model to be developed for assessing exposure to environmental contaminants in foods. A preliminary estimate of the dietary intake of dioxins is provided, revealing the high levels of exposure to these contaminants in the study population.
