A resume is here presented of the results of investigations concerning the identification, quantitative determination and evaluation of the relative contribution of the volatiles of cloudberry (Rubus chamaemorus L.) and hybrid between raspberry (Rubus idaeus L.) and arctic bramble (Rubus arcticus L.). Aromatic compounds are very prevalent in cloudberries. Of the over one hundred volatiles identified, benzyl alcohol, 4-hydroxyacetophenone, 4-vinyl-phenol, 2-phenylethanol and trans cinnamyl alcohol are the most abundant neutral components. The acid fraction consists mainly of benzoic acid, but cis and trans cinnamic acids together with butanoic, 2-methylbutanoic, acetic and hexanoic acids are also present in considerable amounts. Heating experiments with cloudberry press juice revealed 21 compounds exhibiting changes in concentration at or below the 10% significance level.
