摘要

Although the remarkable sanitizing effect from use of detergents in washing raw food products can be demonstrated, use of these cleaning aids in commer¬cial food processing plants must also insure that final, clean water rinsing of the foods adequately removes residual detergent. Similarly, addition of wetting agents to caustic solutions to obtain more efficient peeling of fruits, tomatoes, and root crops, must assume that rinsing of the peeled product removes significant traces of residual wetting agent.nIn view of the wide spread use of detergents and wetting agents in the food industries and the great need to employ these washing aids in more effective removal of microbial, chemical, and, possibly, radioactive contaminants, an extensive series of food washing studies was undertaken.
