摘要

Nutritive qualities of different oils are determined by high content of biologically active substances in the oils-linolenic acid, fat-dissolving vitamins and phosphatides. The most important factor which determines the importance of any oil is its stability to process of oxidation because the products of oxidation are toxic to human organisms. (Author)
