摘要

Research work is devoted to the study of key ecological indicators of grain crop production in Central Kazakhstan to organise monitoring in different areas of agriculture and food security of the country, the definition of heavy metal accumulation in the analysed crops. The article presents the results of the contamination of marketable grain with biologically toxic elements Pb, As, Cd and Hg. Studies have found that levels of contamination registered harvest wheat Pb below the permissible concentrations. However, there is a resistance of common wheat Triticum aestivum L. to other toxic pollutants: arsenic, cadmium, mercury. Thus, the analysis of qualitative features of commodity raw wheat Triticum aestivum L. by accumulation of heavy metals showed full fitness for flour, the baking industry in the country.
