Possibilities for utilization of by-products from slaughterhouses or meat factories are discussed with reference to: relevant EU regulations for disposal or utilization of carcass and meat processing by-products; classification of by-products in relation to their potential hazard and suitability for human consumption; classification of specific by-product types; and permitted methods for disposal or utilization of meat industry by-products.
