When viewed in overall terms, the average world figures for olive oil production and con-sumption during the 1990s (1990/91-1999/00), amounting to 2,071,400 t and 2,077,400 t respectively, show a general balance with production falling slightly short of consumption (-6,000 t). However, these balanced aggregate data for the decade could have masked far-reaching changes in the sector translating into a faster rate of growth in production versus consumption in the second half of the decade. The fact is that mean production was below consumption in the first five-year period (-53,200 t) but above it in the second (+41,200 t).
