Body composition of cull ewes from New Zealand hill country

Body composition of Romney #xD7; Romney, Border Leicester #xD7; Romney, Poll Dorset #xD7; Romney, and Perendale #xD7; Perendale ewes were evaluated. Border Leicester crosses had the heaviest carcasses of all the breeds, and purebred Romney the lightest carcasses. Taste panel assessment found that roasted cull ewe leg was, on the whole, acceptable as roasting meat.
