The lines followed in the classification of tea have their origin in China. In the broadest sense, tea may be described as green or unfermented, black or fermented, oolong pr semi-fermented and brick or tablet tea. Then the district of origin, time ofpicking and grade of leaf is indicated. A similar classification is used for the teas of India, Ceylon, Java, Africa and other exporting countries, although they are now practically all black teas. Thus a tea may be described as a Dooars autumnal BrokenPekoe. This description covers a considerable range, of course, but when the name of the estate is also added, the regular buyer will know at once what kind of tea to expect, what type of manufacture has been followed — orthodox, Legg-cut or CTC — how close the grade is to standard, and so on.
