摘要

Control charts are the statistical instrument most widely used by the person responsible for production or by the quality management system to improve process efficacy and efficiency as well as the quality of finished products through the control of the sources of variability which depend on the process. There are numerous kinds of control charts as a function of the statistical parameter used for measurements (variable or attribute) and of the problem to be investigated. In this work the traditionalShewhart charts are presented along with examples pertaining to their application in vegetable preserving factories. CUSUM EWMA and moving average control charts are also mentioned since they are especially useful when it is important to control small variations in process location (<1.5 unit a).
