A winning combination?

Between 1988 and 1998, the amount of Parmesan and Grana Padano cheese exported from Italy increased from 91thin708 to 238thin255 quintals. The importance of close cooperation between producers and distributors for the sale, quality and price controlof these cheeses is considered. Details are also given of recent proposals for the introduction of a new law in Italy, obliging schools, hospitals and other public institutions to serve some organic foods, including cheese made using traditional methods.
