The consumption of industrially produced ice cream has changed radically in Italy in the last decade and this is shown by the sharp rise in consumer demand. Several factors contributed to raising the profile of this product. Advertising has increased consumers' knowledge of products available on the market, people are re-evaluating the nutritional properties of ice cream and industries have increased the quality and variety of the ice cream produced. Data concerning ice cream consumption in Italy show that domestic consumption represents 63.2%, with 60.3% of the sales occurring in supermarkets. The demand for industrially produced ice cream is higher in the north-west regions of Italy, while lower sales are recorded in central and southern Italy.Germany, the UK and Italy are the 3 highest producers of ice cream in Europe, respectively, while the Irish Republic and Greece are at the lowest European producers.
