There is considerable interest in the use of sensates in consumer products (including pharmaceutical products). When consumed as part of a food or beverage or applied bucally, nasally or dermally, they can deliver cooling, warming, tingling, pungency or other desirable or beneficial sensorial effects to products containing them.Sensates are widely used in consumer products not only because of the interesting organoleptic properties they can deliver, such as cooling, warming, tingling or pungency. Although they are for the most part tasteless and odourless, nevertheless they can also be used to modulate the taste and aroma of consumer praducts, or even contribute to the perception of other organoleptic effects, such as juiciness, deliciousness, freshness and sweetness. They can also be employed to mask unwanted organoleptic effects, such as bitterness or astringency.
