摘要

Protective effects of chungkukjang (chungkook-jang) against oxidative stress were evaluated in LLC-PK1 renal epithelial cells. LLC-PK1 cells showed a decrease in viability and elevation in lipid peroxidation following treatment with generators of nitric oxide (NO) and superoxide anion (O2-) produced by sodium nitrouprusside and pyrogallol, respectively. A methanol extract of chungkukjang markedly inhibited cellular loss and lipid peroxidation in a dose-dependent manner; in particular K chungkukjang exerted the strongest protective effect. In addition, the protective effect of chungkukjang from 3-morpholinosydnonimine, as a source of peroxynitrite, with simultaneous generation of NO and O2- was also studied. Treatment with chungkukjang preserved cell viability and inhibited lipid peroxidation caused by SIN-1 in a dose-dependent manner. Results suggest that chungkukjang may protect against oxidative stress induced by free radicals.
