Full of beans

This is a hybrid of a soup, drawing on recipes from Cuba, Ecuador and other Latin American countries, where beans play such an important part in the diet. It's the meal in a bowl deal, rich in flavour (but low in fat) reeking of comfort and warmth, but with an additional dose of freshness in the form of a spectrum of last minute additions - coriander, of course, spring onion, avocado and so on. It's an egalitarian number - undeniably delicious, but ready to be moulded to each consumer's personal profile. Some like it hot - add more scorching chilli; some like it creamy - bring on the soured cream; some like it fresh -pile in the coriander and spring onions; some, and this is where I come in, like the whole works stirred in hugger-mugger, a bit of everything to get the ultimate, gorgeous, affair in full majesty.
