We are drinking more organic milk than ever yet there is still a surplus. Why? More and more dairy farmers are converting to organic dairy farming. Good news for the environment - but it has also meant a dramatic shift in the UK organic milk market,from its previous reliance on imports to suddenly producing a surplus. British organic dairy farmers are currently having to sell nearly half of their milk as non-organic milk. Yet research shows that the demand is there. According to a recent NOP poll,six million people in the UK want organic milk but cannot find it on their shop shelves.
