The Choice of Varieties in Spain

In all probability the origin of olive growing can be traced back to the Middle East over four thousand years ago from where it fanned out westwards along both sides of the Mediterranean. It would appear that as it spread growers in each area selected the most worthwhile seedlings that were best adapted to the environment. Since then the characteristics of those initially selected cul-tivars have been maintained through vegetative propagation. Now they constitute what are today's varieties.
