While some traditional sausage makers may succumb to the temptation of cutting costs in this troubled economy by downgrading ingredients, processes and packaging, Manitowoc, Wis.-based Cher-Make Sausage Co. remains committed to its long tradition of producing fully cooked sausage the traditional way. "We never compromise on our ingredients, cooking times or processes," says Tom Chermak, president, and grandson of Emil Chermak, who founded the company in 1928.
