Mike Eickman's mantra is simple: "If it isn't good enough to put in our own retail front display case, we wouldn't make it for one of our customers." With those simple words the president of Eickman's Processing Co., Seward, Ill. speaks volumes about how his 60-year-old business has returned to its roots as a premier, custom, meat-processing business. Located about 20 miles south of the Wisconsin border, this third-generation enterprise marks the completion of six decades since its founding by Mike's father, Merlyn Eickman. But the business roots go back another decade earlier when Mike's grandfather, John Eickman, a local depot agent in Seward, helped butcher livestock on local farms.
