Salt performs many functional roles in food products, including protein modification and microbial management. One of the most important functional roles of salt from a sensory perspective is flavor. Salt is a source of the essential nutrient sodium and there is a lot of focus on sodium consumption. The amount of sodium found in most confectionery products is relatively low and, according to the CDC, they are not one of the top-ten sources of sodium in the diet. Confectionery manufacturers continue to find new ways to help differentiate their products. Sea salt, with its gourmet appeal and halo effect, can be used as a marketing opportunity. Sea salt premium chocolates are seen in the market, but there have been recent launches by mainstream manufacturers, too.
