The paper discusses biological activity of beet saponin and its use in medicines and veterinary remedies. Beet saponin is a valuable chemical that beet sugar factories should consider recovering during beet sugar processing. Beet tail has been identified to contain the highest quantity of saponin than any other part of the plant. Press water is identified as the best source for recovering saponin.
