Since many years best known as the global leader in the development and production of malnly insoluble dietary fibres, but also as a reliable supplier and partner for functional cellulose derivates and stabilizing systems. VIVAPUR~® MCG is a stabilizing system based on microcrystalline cellulose, co-processed with cellulose gum. After proper activation by high shear mixing or high pressure homogenization, fine cellulose fibrils start to form a thixotropic network. Depending on the specific grade and concentration, this network increases the viscosity, provides suspending properties, improves shape stability and decreases syneresis. MCG is shear reversible, thermo-stable and stable over a wide range of processing and recipe parameters. Therefore it can be used in different varieties of equipment as well as with different raw materials.
