Recently, the U.S. Dept. of Health and Human Services (HHS) released prelimi-nary data from the Centers for Disease Control and Prevention (CDC) that show a decline in the overall incidence of Salmonella and Campylobacter infections, two of the most common causes of foodborne disease in the United States.
