SummaryThe aim of the study was to evaluate the carcass and meat characteristics of the animals of Minorcan cattle breed as previous step to the creation of a quality label. 8 males one-year-old were used. Studied variables were: conformation and fatness scores, carcass morphometry, pH, colour, and sensory analysis. Carcasses were better than that of the Friesian breed, its direct competitor in the island. The Minorcan cattle breed presented a low instrumental toughness and was well valued in the sensory test.
