Edible cold pressed oils have specifc characteristics and ?avors andcontain valuable bioactive substances such as polyunsaturated fattyacids, tocopherols and tocotrienols, free and esterifed sterols, variousphenols, lignans, squalene, triterpene alcohols, carotenoids andchlorophylls. Нe can be included in the category of functionalproducts since their constituents are expected to o??er additional healthproperties beyond basic nutritional needs. Нe bibliography for thebiological activity of some minor compounds of pressed oils becomesmore extensive every day but the published material has not yet beenfully evaluated [1].
