Labeling and allowed claims for food products in European Union have considerably evolved during the last decade. Regarding the question of cholesterol, the consumers’ expectations have changed due to public health messages on this matter, and the modifications in the ambient, scientific and current media environment context. The regulatory constraints have risen, but have also made possible for food products to use claims related with blood cholesterol levels, if they reach the conditions of use and the required additional information in this communication.
