摘要

Litchi ( Sonn.) is one of the most relishedfruits in India. In the present review, historical backgroundof litchi has been discussed. Litchi production scenario allover India has been outlined. Several Litchi varieties likeShahi, China, Early Bedana, Late Bedana, Bombai to name afew have been enlisted as well as some litchi based productslike dried litchi, canned litchi, frozen litchi, litchi honey,litchi wine, health benef icial litchi drinks to name a fewhave been documented. The processing techniques likesome advanced procedure of drying, canning, pollination,fermentation, high-pressure processing of fruits for the saidproducts have also been discussed. We have paid attentionto some of the products that have been commercialized andneed to becommercialized in thisreview.
