La rentabilidad económica de la industria agroalimentaria en el mercado del aceite de oliva. El caso de Andalucía

Olive tree growing has a very important role in the productive specialisation process the Andalusian agriculture has been going through during the last years. Nowadays, the Andalusian production represents 43,1% of the total European Community production and 36,7% of the world’s production. Moreover, various agro-industrial establishments participate in the elaboration of olive oil and various products are obtained. This work starts with the analysis of the industrial organisation of the olive oil sector and the transformations the value chain has undergone. It continues with the study of the most important issues of the methodology applied during the investigation. Thereafter the territorial perspective is included and the concentration processes of the agrifoodstuffs industries are dealt with. Furthermore, the role of large food manufacturing companies and the retailing and distribution industry in the olive oil value chain is studied, as well as the return agri-foodstuffs industries obtain from the olive oil commercialisation is estimated. Finally, the most important conclusions of this investigation are presented.
