Traçabilité, situation légale et développement futur

As the result of the globalization of the food market as well as different feed and food scandals, the need for being able to trace foodstuffs along all the food chain becomes increasingly obvious. On international level, in the context of the Codex Alimentarius works, an agreement was obtained over the most important elements for a definition of the traceability. The European Union defined this concept in its regulation (EC) n° 178/2002. Although Switzerland did not explicitly regulate the traceability in its food regulations, it became the indispensable condition to guarantee the respect of the current legal regulations as regards protection of health and against fraud.%Sur fond de globalisation du marché alimentaire et des divers scandales liés aux denrées alimentaires et aux aliments pour animaux, la nécessité de pouvoir retracer le cheminement d'un produit alimentaire devient de plus en plus évidente. On a donc voulu unifier, au niveau international, les principes d'un système de traçabilité dans le cadre du Codex Alimentarius. L'UE a défini cette notion dans son règlement (CE) n° 178/2002. Bien que la Suisse ne l'ait pas explicitement réglementée dans son droit alimentaire, la traçabilité est devenue la condition sine qua non pour garantir le respect des prescriptions légales actuelles en matière de protection de la santé et contre la tromperie.
